There were thunderstorms ⛈️ at predawn today, Tuesday, February 17th, 2026. A rolling Thunder awakened me at around 4:00 a.m. It shook the building. Minutes later, a flash of Lightning ⚡ lit up my room, followed by the rumbling sound of rolling Thunder. I was reminded of home in the Philippines. I sure miss the Lightning ๐ฉ️ and Thunder ⛈️ in Davao City, Mindanao. I couldn't sleep anymore so I just made some coffee. ☕
I had planned on going to the Solano County Older & Disabled Adults Services early in the day to inquire about my coverage. But I had to wait for the thunderstorm to abate first before I left home. I also needed to get a print-out of my disability receipts to hand over to my labor union. But my Case Worker said that I would have to go to the EDD ( Employment Development Department ) Work Force Services to get the print-out for my disability receipts.
It was just 45 minutes before the Social Security Office had to close for the day. I just decided to swing by early tomorrow morning. In the meantime, I went to FEDEX KINKO'S to make copies of my Union Pension documents, my Driver's License and my Proof of Naturalization.

Today, Thursday, February 19th, 2025, at around 8:05 am, I called the Sacramento EDD Office. I couldn't get a live person to answer my call. I kept getting a voicemail on each of the 4 times that I called❗๐ ๐❗
If it doesn't rain tomorrow, I'll just have to drive to Sacramento to get the print-out to attach to my Pension Benefits request. And I'm really not looking forward to putting over 124 Miles ( 200 Kilometers ) on my car's Odometer because the EDD doesn't have anyone to answer calls❗๐ ๐❗
Anyway, I finally got around to making a batch of Puto Balanghoy. I used the Fine Grater this time around so that each Puto Balanghoy will come out cooked evenly. I used the grater for the Sweet Potato that I'm making half & half with the pre-grated Balanghoy ( i.e. Cassava or Yucca ).
The last time that I made Puto Balanghoy, I used a ( What-I-Didn't-Know-At-That-Time ) synthetic Brush to coat the inside of each mold with Oil. And it was ONLY after I shared the Puto with my brother & his family and my co-workers that I realized that the tip of the synthetic Brush HAD MELTED‼️๐ง‼️ Meaning that I and everyone else that I shared my batches of Puto Balanghoy UNKNOWINGLY ATE SOME PLASTIC‼️๐ฌ‼️ DON'T TELL ANYONE, PLEASE❗๐คซ❗ I Used A Silicone Pastry Brush This Time Around. ๐ But I'll need to go to a home crafts store and buy a Real pastry brush!
The batch that I made today is 8 pieces of ½ Cassava & ½ Sweet Potato and 10 pieces of ½ Cassava & ½ Purple Yam. And I used TRUVIA® Cane Sugar Blend instead of regular sugar in a 0.5 : 1.0 ratio. I also put an Advent Calendar Chocolate Candy in one of both types of Puto Balanghoy---MINE! I'm just waiting for the batch to get cooked. It's 11:24 am and there's still 15 more minutes before the boiling gets done! ๐คค It turned out a little bit sweet; I'll have to reduce the TRUVIA® Cane Sugar Blend to ⅓ Cup instead of the recommended ½ Cup substitution.

I was given the 1-800 number for the Social Security Administration! And the EDD staff responsible for answering calls told me that she'll send me a print-out of the Medical Disability Form Authorization to hand to someone at the Social Security Administration for a print-out of my disability receipts. I asked where I'm supposed to turn in the request form. I was told the one closest to me, the Social Security Administration on Plaza Drive which is less than 3 Miles ( under 5 Kilometers ) away❗ Boy, am I ever glad that I called the Sacramento EDD Office first before I had the chance to get on the road‼️๐ฎ๐จ‼️
I should get the authorization form sometime in the next 10 business days, so I was told.

Tonight, Saturday, February 21st, 2026, I made a plain Cassava batch of 10 Puto Balanghoy. And I used Land O' Lakes® Brown Sugar & Cinnamon Butter to coat the inside of each mold. I didn't know that the Brown Sugar in the Cinnamon Butter would caramelize if heated for a long enough time--even on Low Heat❗๐คฆ♂️❗ I will have to make another batch someday because of this and because I didn't have enough Grated Coconut for the Balanghoy; so that they all turned out Very Firm‼️๐♂️‼️ Remember the proportion of the ingredients: 4 Cups Grated Cassava, 2 Cups Grated Coconut, 1 Cup of White Sugar or Sugar Substitute ( + some Brown Sugar to sprinkle the inside bottom of each mold ) and 1 Tablespoon of ( imitation ) Vanilla Extract. Food Color is optional if you want it easier to tell them apart if you're making different flavors of Balanghoy.

Today, Monday, February 23rd, 2026, I made a batch of Binaki. I learned that I only needed--at most--one 14.75 oz ( 418.0 g ) can of Creamed Sweet Corn because there was no water in the can to drain! I'll have to stop making this for some time because, the way that it's cooked, an Asian Food Steamer is really impractical for all-year use if I don't have easy access to Fresh Corn Husks and must settle for the dried, Mature Corn Husks sold at Mexican Stores❗ I'll have to adapt to the Mexican-style preparation by using a Tamale ๐ซ Steamer! I'll have to look at some Tamale Steamers, measure the dimensions, make the portion size uniform and modify the steamer for ease of use, capacity & efficiency. Because anyone who has made Tamales ๐ซ wrapped in dried, Mature Corn Husks will tell you that the process is a time-consuming Pain In The Butt‼️
Also, Asian Food Steamers made of Aluminum are not as sturdy as Stainless Steel Tamale Steamers and will pit the more that you use it! It makes one wonder, where do all of the pitted pieces of Aluminum go⁉️๐ค⁉️

Michael Faraday was born in 1791 in Newington Butts, south London, the son of a blacksmith who was frequently too ill to work. The family was often hungry. His education consisted of learning to read, write, and do basic arithmetic at a church Sunday school, and that was where it ended. At the age of 13 he was running errands for a bookbinder and bookseller. At 14 he was apprenticed to the man, George Riebau of Blandford Street, Marylebone, for a seven-year term. Unlike every other apprentice in that shop, Faraday read every book that came in to be bound.
He read the entry on electricity in the third edition of the Encyclopaedia Britannica and was so captivated that he built himself a crude electrostatic generator out of old bottles and lumber. He read Jane Marcet's Conversations on Chemistry and began conducting his own chemical experiments. He joined the City Philosophical Society in 1810, a group of young working men who met weekly to hear lectures on science and discuss what they had learned. He was educating himself in the only way available to him, from the inside of a trade he had no intention of staying in.
In 1812, a customer at the bookshop gave the 20-year-old Faraday four tickets to attend lectures at the Royal Institution by Sir Humphry Davy, then the most celebrated chemist in Britain. Faraday attended every one, taking meticulous notes in the careful hand of a man who had taught himself to write properly. He bound those notes into a beautiful 300-page volume and sent them to Davy with a letter asking for any position in science, however small. Davy wrote back kindly but said there was nothing available.
Then, a few months later, Davy's laboratory assistant was dismissed after getting into a fight. Davy remembered the eager young bookbinder. In March 1813, Faraday was hired as a laboratory assistant at the Royal Institution at 25 shillings a week, two rooms in the attic, and the use of the laboratory. It was, in the judgment of history, one of the most consequential hiring decisions ever made.
Within a year, Davy took Faraday on an 18-month tour of Europe, where he met many of the leading scientists of the age. Back in London, Faraday began his own research. In 1821 he invented the electric motor, demonstrating that electrical current could produce continuous mechanical motion, a concept nobody had achieved before. By 1831 he had made the discovery that would change the world: electromagnetic induction. By passing a magnet through a coil of wire, he generated an electric current. This was the first electrical generator, the foundational principle behind every power station ever built.
He went on to discover the laws of electrolysis, coined the terms electrode, anode, cathode, and ion, discovered benzene, invented the Faraday cage that today lines microwave ovens and MRI scanners, and demonstrated the first known connection between light and magnetism. He had no formal education. He could not write mathematics. He worked entirely through experiment and physical intuition, visualising invisible lines of magnetic force moving through space in ways that mathematical physicists initially dismissed as mystical, and that James Clerk Maxwell later showed to be perfectly correct.
When Faraday was eventually appointed Professor of Chemistry at the Royal Institution, he was offered a knighthood. He turned it down, citing his religious beliefs. Albert Einstein kept a portrait of Faraday on his study wall alongside Isaac Newton and James Clerk Maxwell. Physicist Ernest Rutherford said there was no honour too great to pay to his memory. The man who had spent his teenage years sewing pages together had, without a university, without a degree, and without the language of advanced mathematics, built the intellectual foundations of the electrical age. Every time you switch on a light, start a car engine, or charge a phone, you are using something that traces directly back to a self-educated blacksmith's son from south London who read every book that passed through his hands.
